Atsarang Labong | Pickled Bamboo Shoots

Atsarang labong or Pickled Bamboo shoots is one of the Asian favorite cuisine. Bamboo shoots is a vegetable delicacy native to Asian countries where climate is tropical. Bamboo shoots is easy to cook and is sustainable. Filipino loves to pair this popular vegetable with Saluyot (Jute leaves) squash with thick coconut cream, shrimps or crabs.



Atsarang Labong is so easy to make, you'll only needing the following ingredients below.

    1 Kilogram Boiled Bamboo Shoots
    1/2 Cup Onions
    1/2 cups Garlic
    1/2 cups Ginger
    Bay leaves / laurel
    1 cup sugar
    2 cups vinegar
    1/2 cup Green peppers
    1 tablespoon pepper powder
    1 cup Sliced Carrots
    3 Cups of Water
    and Salt to taste

Procedures:

1. In a casserole, mix 3 cups of water, black pepper powder, vinegar, ginger, garlic and sugar.     Mix well and boil in a medium fire for 10 minutes.

2. Bring sliced carrots, Add onions and green chilies and boil for 3 minutes.

3. Mixed boiled Labong strips and boil for 5 minutes. Rinse off from fire to cool down.

4. Keep refrigerated to prolonged shelf life up to 10 days.

5. Serve, and Enjoy!
